  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 fresh lemons (zest and juice)
  • 3 garlic cloves, minced
  • 1 cup low-sodium chicken broth
  • 2 tbsp extra virgin olive oil
  • 2 tbsp fresh parsley, finely chopped

Instructions

  1. Pound chicken breasts between plastic wrap until about half an inch thick.
  2. Season flour with salt and pepper on a plate. Dredge each chicken piece in flour, shaking off excess.
  3. Heat olive oil in a large skillet over medium heat. Sauté the floured chicken until golden brown on both sides, about 5-7 minutes per side.
  4. Remove chicken from the skillet; add minced garlic and sauté for one minute. Pour in chicken broth and lemon juice, scraping up any browned bits.
  5. Return the chicken to the skillet and simmer for 3-5 minutes to meld flavors.
  6. Garnish with freshly chopped parsley before serving.
