Taco Stuffed Sweet Potatoes are a vibrant, nutritious meal option that blends the sweetness of roasted potatoes with zesty taco flavors, making them perfect for any occasion.

  • 4 medium sweet potatoes (approximately 2 lbs)
  • 1 lb ground turkey
  • 1 oz taco seasoning (1 packet)
  • 15 oz can black beans, drained and rinsed
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream or Greek yogurt
  • ¼ cup fresh cilantro, chopped
  • Juice of 1 lime

Instructions

  1. Preheat the oven to 400°F (200°C). Wash and dry the sweet potatoes, then pierce each several times with a fork.
  2. Bake the sweet potatoes directly on the oven rack or on a baking sheet for 45-60 minutes until tender.
  3. In a skillet over medium heat, cook ground turkey until browned, about 5-7 minutes. Drain excess fat.
  4. Stir in the taco seasoning according to package instructions and add black beans and corn. Heat through for another 3-5 minutes.
  5. Once sweet potatoes are done baking, slice them open lengthwise and fluff the insides with a fork. Stuff with the turkey mixture.
  6. Top each potato with shredded cheese, sour cream or Greek yogurt, fresh cilantro, and lime juice before serving.
