Fresh garlic cloves
Unsalted butter
Fresh rosemary
Lemon juice
Olive oil
Salt and pepper
Instructions
Preheat oven to 375°F (190°C) and let the lamb sit at room temperature for 30 minutes.
In a bowl, mix softened unsalted butter, minced garlic, chopped rosemary, salt, pepper, and lemon juice until well combined.
Pat the leg of lamb dry and rub half of the garlic butter mixture all over it.
Place the lamb in a roasting pan and roast for about 1 hour or until the internal temperature reaches 135°F (57°C) for medium-rare.
Baste every 20 minutes with the remaining garlic butter mixture.
Rest for 15 minutes before carving.
Notes
For enhanced flavor, season the lamb overnight.
