  • 2 ripe peaches, halved and pitted
  • 2 ripe plums, halved and pitted
  • 4 cups fresh arugula
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste
  • 2 tablespoons pine nuts (optional)

Instructions

  1. Preheat the grill to medium-high heat and lightly brush the grates with olive oil.
  2. Grill the peaches and plums cut-side down for about 4-5 minutes until charred. Flip and cook for an additional 3-4 minutes until tender.
  3. In a large bowl, combine arugula with olive oil, balsamic vinegar, honey, salt, and pepper. Toss gently to coat.
  4. Once the grilled fruits are cool enough to handle, slice them into bite-sized pieces and add them to the arugula mixture.
  5. If using pine nuts, toast briefly in a dry pan until golden brown. Sprinkle over the salad before serving.
