Cilantro Lime Rice is a vibrant and zesty side dish that brightens any meal. Its fresh flavors make it an ideal pairing for tacos, burrito bowls, or as a standalone delight.

Ingredients

  • 1 cup long-grain white rice
  • 2 cups vegetable broth
  • 1/2 cup fresh cilantro, finely chopped
  • 2 tablespoons fresh lime juice
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt

Instructions

  1. Rinse the rice under cold water until the water runs clear to remove excess starch.
  2. In a medium pot, combine the rinsed rice with vegetable broth and salt. Bring to a boil, then reduce heat to low. Cover and simmer for 15-20 minutes until liquid is absorbed.
  3. Remove from heat and let sit covered for an additional 5 minutes.
  4. Fluff the rice with a fork, then stir in lime juice and chopped cilantro until well combined.
  5. Drizzle with olive oil and mix gently. Adjust seasoning as needed.

Notes

  • For added texture, mix in black beans or corn.
  • A dash of cumin can enhance flavor, while diced jalapeños add heat.
  •  Store leftovers in an airtight container for up to five days; reheat gently on the stove.
