Ingredients
Scale
1 cup long-grain white rice
2 cups vegetable broth
1/2 cup fresh cilantro, finely chopped
2 tablespoons fresh lime juice
1 tablespoon olive oil
1/2 teaspoon salt
Instructions
Rinse the rice under cold water until the water runs clear to remove excess starch.
In a medium pot, combine the rinsed rice with vegetable broth and salt. Bring to a boil, then reduce heat to low. Cover and simmer for 15-20 minutes until liquid is absorbed.
Remove from heat and let sit covered for an additional 5 minutes.
Fluff the rice with a fork, then stir in lime juice and chopped cilantro until well combined.
Drizzle with olive oil and mix gently. Adjust seasoning as needed.
Notes
For added texture, mix in black beans or corn.
A dash of cumin can enhance flavor, while diced jalapeños add heat.
Store leftovers in an airtight container for up to five days; reheat gently on the stove.
