1 lb lean ground beef
8 corn tortillas
2 cups shredded cheddar cheese
2 cups enchilada sauce (store-bought or homemade)
1/4 cup fresh cilantro, chopped
1/2 cup sour cream (for serving)
1 medium onion, chopped
1 tsp cumin
1 tsp chili powder
Instructions
Preheat the oven to 375°F (190°C).
In a skillet over medium heat, brown the ground beef. Add chopped onions and sauté until translucent.
Mix in cumin and chili powder; pour in half of the enchilada sauce and simmer for 5 minutes.
Spoon some beef mixture into each tortilla, sprinkle with cheese, roll tightly, and place seam-side down in a greased baking dish.
Pour remaining enchilada sauce over rolled tortillas and top with more cheese.
Bake uncovered for 20-25 minutes until bubbly and golden.
Notes
For added flavor, consider using different cheeses like Monterey Jack or pepper jack.
To make it vegetarian, substitute ground beef with black beans or shredded vegetables.
