Ingredients

  • Whole Chicken (4-5 lbs)
  • Fresh Lemons (2)
  • Garlic Cloves (4)
  • Extra Virgin Olive Oil (1/4 cup)
  • Fresh Thyme (2 tbsp)
  • Fresh Rosemary (2 tbsp)
  • Carrots (2, chopped)
  • Potatoes (2, chopped)
  • Salt & Pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Mix olive oil, juice of two lemons, minced garlic, chopped thyme, rosemary, salt, and pepper in a bowl.
  3. Pat the chicken dry and rub the marinade generously all over and inside the cavity.
  4. Arrange chopped carrots and potatoes around the chicken in a roasting pan.
  5. Roast for about 1 hour 15 minutes or until the internal temperature reaches 165°F (75°C).
  6. Let the chicken rest for 10-15 minutes before carving for optimal juiciness.
