Ingredients

Scale
  • 500g strong white bread flour
  • 75g caster sugar
  • 10g salt
  • 10g mixed spice powder
  • 10g instant yeast
  • 300ml warmed whole milk
  • 40g unsalted butter, melted
  • 2 large eggs
  • 200g mixed dried fruit (raisins, currants)
  • Zest of one orange

Instructions

  1. In a bowl, mix flour, sugar, salt, mixed spice powder, and instant yeast.
  2. In another bowl, whisk together warmed milk, melted butter, and eggs. Gradually combine wet and dry ingredients until a dough forms.
  3. Knead the dough on a floured surface for about ten minutes until smooth and elastic.
  4. Place in an oiled bowl, cover with a damp cloth, and let rise in a warm area for one hour or until doubled in size.
  5. Once risen, gently punch down the dough and fold in dried fruits and orange zest. Divide into equal pieces to shape into buns.
  6. Arrange shaped buns on a lined baking tray and let rise again for another 30 minutes.
  7. Preheat oven to 220°C (428°F). Create crosses with a paste of plain flour and water on each bun.
  8. Bake for about 20 minutes or until golden brown. Brush with apricot glaze after cooling slightly.

Notes

  •  For softer crusts, cover the buns with foil halfway through baking.
  •  Experiment with different dried fruits like cranberries or cherries for unique flavors.
  •  Substitute regular milk with almond or oat milk for dairy-free options.
