  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 8 oz high-quality spaghetti
  • 3 cloves fresh garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 8 oz burrata cheese
  • 2 cups fresh spinach
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Chop chicken into bite-sized pieces.
  2. Heat olive oil in a large skillet over medium heat. Add chicken, season with salt and pepper, and cook until browned (6-8 minutes).
  3. Stir in minced garlic and spinach; cook until spinach wilts (about 2 minutes).
  4. Pour in heavy cream and add grated Parmesan cheese. Stir until melted into a silky sauce.
  5. In another pot, boil salted water and cook spaghetti according to package instructions until al dente. Reserve some pasta water before draining.
  6. Combine drained spaghetti with the creamy mixture in the skillet, adding reserved pasta water as needed for consistency. Toss gently to coat.
  7. Serve topped with torn burrata cheese.
