8 oz (225g) egg noodles
1 medium onion, chopped
8 oz (225g) mushrooms (cremini or white button), sliced
2 cloves garlic, minced
1 cup (240ml) low-sodium beef broth
1/2 cup (120g) sour cream
1 tbsp Dijon mustard
1 tsp paprika
2 tbsp olive oil or butter
Salt and pepper to taste

Instructions
Prep: Chop the onion, slice the mushrooms, and mince the garlic.
Cook noodles: Boil egg noodles in salted water until al dente. Drain and set aside.
