  • 1 lb (450g) beef sirloin, thinly sliced
  • 8 oz (225g) egg noodles
  • 1 medium onion, chopped
  • 8 oz (225g) mushrooms (cremini or white button), sliced
  • 2 cloves garlic, minced
  • 1 cup (240ml) low-sodium beef broth
  • 1/2 cup (120g) sour cream
  • 1 tbsp Dijon mustard
  • 1 tsp paprika
  • 2 tbsp olive oil or butter
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  • Prep: Chop the onion, slice the mushrooms, and mince the garlic.
  • Cook noodles: Boil egg noodles in salted water until al dente. Drain and set aside.
  • Cook beef: In a skillet, heat 1 tbsp olive oil or butter. Sauté beef until browned, then remove.
  • Cook veggies: In the same skillet, add 1 tbsp olive oil or butter. Sauté onions, mushrooms, and garlic until softened.
  • Sauce: Stir in beef broth, Dijon mustard, paprika, salt, and pepper. Simmer for 5 minutes.
  • Combine: Return beef to the skillet and stir in sour cream until combined and warmed through.
  • Serve: Spoon the beef mixture over egg noodles and garnish with fresh parsley if desired.
