  • 1 teaspoon chili powder

Instructions

  1. Prepare your ingredients: Chop the red bell pepper and cilantro; set aside.
  2. Cook the brown rice according to package instructions.
  3. In a large skillet, heat olive oil over medium heat. Add diced chicken and season with salt and pepper. Sauté until golden brown (5-7 minutes).
  4. Add the chopped red bell pepper and corn to the skillet. Cook until softened and aromatic (about 3 minutes).
  5. Sprinkle cumin and chili powder over the mixture; stir to combine.
