  • Juice of 2 fresh lemons (about ½ cup)
  • 2 tsp freshly cracked black pepper
  • 3 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 tsp salt
  • 1 tsp dried oregano
  • Optional garnish: Fresh parsley or green onions

Instructions

  1. In a large bowl or zip-lock bag, combine chicken breasts, lemon juice, olive oil, salt, and black pepper.
  2. Add minced garlic and oregano; toss to coat the chicken evenly.
  3. Seal the bag or cover the bowl and marinate in the refrigerator for at least 30 minutes or up to overnight.
  4. Preheat your grill to medium-high heat or your oven to 400°F (200°C).
  5. Grill each side of the chicken for about 6-7 minutes until fully cooked (internal temperature reaches 165°F/75°C) or bake on a greased sheet for about 25-30 minutes.
  6. Allow the chicken to rest for five minutes before slicing and garnish with parsley or green onions if desired.
