Tuscan White Bean Soup is a comforting bowl of creamy white beans and fresh vegetables, simmered with aromatic herbs. Perfect for cozy nights or meal prep!

Ingredients

  • 2 cans (15 oz each) cannellini beans, drained and rinsed
  • 4 cloves garlic, minced
  • 1 medium yellow onion, chopped
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 4 cups low-sodium vegetable broth
  • 2 tbsp extra-virgin olive oil
  • 1 tsp fresh thyme, chopped
  • 1 tsp fresh rosemary, chopped
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté onions and garlic until translucent.
  2. Add carrots and celery; cook until softened.
  3. Stir in the cannellini beans and vegetable broth. Bring to a gentle simmer.
  4. Season with thyme, rosemary, salt, and pepper. Simmer for 15 minutes.
  5. For a creamier texture, mash some beans against the pot or use an immersion blender.
  6. Just before serving, add lemon juice for brightness.
