4 cloves garlic, minced
1 medium yellow onion, chopped
2 medium carrots, diced
2 stalks celery, diced
4 cups low-sodium vegetable broth
2 tbsp extra-virgin olive oil
1 tsp fresh thyme, chopped
1 tsp fresh rosemary, chopped
Juice of 1 lemon
Salt and pepper to taste
Instructions
In a large pot, heat olive oil over medium heat. Sauté onions and garlic until translucent.
Add carrots and celery; cook until softened.
Stir in the cannellini beans and vegetable broth. Bring to a gentle simmer.
Season with thyme, rosemary, salt, and pepper. Simmer for 15 minutes.
For a creamier texture, mash some beans against the pot or use an immersion blender.
Just before serving, add lemon juice for brightness.
