Teriyaki Chicken and Pineapple is a quick and flavorful dish that combines tender chicken with sweet pineapple for a delightful, tropical twist on dinner.

  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
  • 2 cups fresh pineapple, diced
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons brown sugar
  • 2 garlic cloves, minced
  • 1 tablespoon fresh ginger, minced
  • 1 teaspoon sesame oil
  • 2 green onions, chopped (for garnish)

Instructions

  1. In a bowl, whisk together soy sauce, brown sugar, garlic, and ginger to make the teriyaki sauce.
  2. Heat sesame oil in a large skillet over medium-high heat. Add chicken pieces and sauté until golden brown and cooked through, about 5-7 minutes.
  3. During the last minute of cooking, add the pineapple chunks and stir until heated through.
  4. Remove from heat and garnish with green onions. Serve over rice or noodles.
