  • 1 cup cooked quinoa
  • 1 medium bell pepper, diced (red or yellow)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup rolled oats
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse and drain the black beans thoroughly. Cook quinoa according to package instructions (approximately 15 minutes).
  2. In a skillet, heat olive oil over medium heat. Sauté the onions and bell peppers until soft and fragrant (about 5-7 minutes).
  3. In a large bowl, mash the black beans with a fork until mostly smooth but still chunky. Stir in cooked quinoa.
  4. Add the sautéed veggies, garlic, cumin, paprika, oats, salt, and pepper to the bean mixture. Combine until well mixed.
  5. Shape the mixture into burger-sized patties (roughly half an inch thick).
  6. Preheat your grill or skillet on medium-high heat. Cook each patty for about 4-5 minutes per side until golden brown.
  7. Serve on toasted buns with your favorite toppings like avocado, lettuce, or tomato.
