Taco Pasta is a quick and delightful dish that blends cheesy goodness with zesty taco flavors, perfect for busy weeknights or family gatherings.

Ingredients

  • 8 oz elbow macaroni
  • 1 lb ground turkey or chicken
  • 1 packet taco seasoning (1 oz)
  • 1 can (14.5 oz) diced tomatoes, fire-roasted if possible
  • 1 cup shredded cheddar cheese
  • 1 cup bell peppers, diced (mixed colors)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • Fresh cilantro for garnish (optional)

Instructions

  1. Cook the elbow macaroni in a large pot of salted boiling water until al dente. Drain and set aside.
  2. In a large skillet over medium heat, sauté diced onions and bell peppers until softened, about 5 minutes.
  3. Add ground turkey or chicken to the skillet and cook until browned and fully cooked through, around 8-10 minutes.
  4. Stir in taco seasoning and minced garlic; mix well to combine.
  5. Pour in the diced tomatoes and chicken broth; bring to a simmer.
  6. Add the cooked macaroni and shredded cheddar cheese; stir until cheese is melted and everything is creamy.
  7. Serve hot, garnished with fresh cilantro if desired.

Notes

  • For added texture, consider mixing in black beans or corn.
  •  Use low-sodium broth to control saltiness without sacrificing flavor.
  • This dish can easily be made vegetarian by substituting meat with lentils or mushrooms.
