Pineapple Glazed Salmon is a vibrant dish that combines tender salmon with a sweet and tangy pineapple glaze, perfect for impressing guests or enjoying a relaxing dinner at home.

  • 4 salmon fillets (6 oz each)
  • 1 cup pineapple juice (100% pure)
  • 1 cup fresh pineapple, diced
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp honey
  • 3 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 2 tbsp lime juice (freshly squeezed)
  • Sesame seeds (optional, for garnish)

Instructions

  1. In a bowl, whisk together pineapple juice, soy sauce, honey, garlic, ginger, and lime juice to create the marinade.
  2. Place salmon fillets in a shallow dish and pour half the marinade over them. Marinate for 30 minutes.
  3. Preheat grill or oven to medium-high heat (375°F/190°C). Oil the grill grates if grilling.
  4. Cook salmon for 10-12 minutes until it reaches an internal temperature of 145°F. Baste with reserved marinade halfway through.
  5. Add diced fresh pineapple around the salmon in the last few minutes of cooking. Serve garnished with sesame seeds.

  • Substitute mango or peach for pineapple in the glaze for a unique twist.
