Ingredients
Scale
4 salmon fillets (6 oz each)
1 cup pineapple juice (100% pure)
1 cup fresh pineapple, diced
2 tbsp low-sodium soy sauce
2 tbsp honey
3 garlic cloves, minced
1-inch piece of ginger, grated
2 tbsp lime juice (freshly squeezed)
Sesame seeds (optional, for garnish)
Instructions
In a bowl, whisk together pineapple juice, soy sauce, honey, garlic, ginger, and lime juice to create the marinade.
Place salmon fillets in a shallow dish and pour half the marinade over them. Marinate for 30 minutes.
Preheat grill or oven to medium-high heat (375°F/190°C). Oil the grill grates if grilling.
Cook salmon for 10-12 minutes until it reaches an internal temperature of 145°F. Baste with reserved marinade halfway through.
Add diced fresh pineapple around the salmon in the last few minutes of cooking. Serve garnished with sesame seeds.
Notes
Substitute mango or peach for pineapple in the glaze for a unique twist.
Add crushed red pepper flakes for a spicy kick or sprinkle fresh herbs like cilantro for added freshness.
