  • 1 medium spaghetti squash (approximately 2 lbs)
  • 1 lb lean ground turkey
  • 3 cloves fresh garlic, minced
  • 1 large egg
  • 1/2 cup grated Parmesan cheese
  • 2 tsp Italian seasoning
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. 1. Preheat oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out seeds. Drizzle with olive oil, then sprinkle with salt and pepper.
  2. 2. Place cut-side down on a parchment-lined baking sheet and roast for 30-40 minutes, until tender.
