  • 1 medium spaghetti squash
  • 1 lb lean ground turkey
  • 1/2 cup whole wheat or gluten-free breadcrumbs
  • 1/4 cup freshly grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out seeds. Drizzle cut sides with olive oil and sprinkle with salt and pepper.
  3. Place squash halves cut-side down on a parchment-lined baking sheet. Roast for 30-40 minutes until tender.
  4. In a large bowl, combine ground turkey, breadcrumbs, minced garlic, Parmesan cheese, Italian seasoning, salt, and pepper. Mix until just combined.
  5. Roll mixture into 1-inch meatballs and arrange on another parchment-lined baking sheet.
  6. Bake meatballs in the oven for 20-25 minutes until golden brown and cooked through (165°F internal temperature).
  7. Once the squash is roasted, use a fork to scrape out strands into a serving bowl.
