2 lbs beef chuck roast, cut into 1-inch cubes
3 medium carrots, chopped
2 medium Yukon Gold potatoes, diced
1 large sweet onion, diced
4 cloves garlic, minced
4 cups low-sodium beef broth
2 tbsp tomato paste
1 tsp dried thyme
2 bay leaves
Salt and pepper to taste
Instructions
Set the Instant Pot to sauté mode. Add oil and sauté onions and garlic until fragrant (about 3 minutes).
Season the beef with salt and pepper. Add to the pot and brown on all sides (about 5 minutes).
Stir in carrots, potatoes, tomato paste, and beef broth until ingredients are covered. Add thyme and bay leaves.
Secure the lid and set to high pressure for 35 minutes. Ensure the steam valve is sealed.
After cooking, allow natural pressure release for 10 minutes before quick releasing any remaining pressure.
Remove bay leaves, taste, and adjust seasoning if necessary.
