  • 1 cup shredded sharp cheddar cheese
  • 1 cup fresh spinach, chopped
  • 1/2 cup bell peppers, finely chopped (red or yellow)
  • 2 large eggs
  • 3/4 cup milk (whole or plant-based)
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 375°F (190°C). Grease or line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, baking powder, and salt.
  3. Gently fold in cheddar cheese, spinach, and bell peppers until evenly mixed.
  4. In another bowl, beat eggs until fluffy. Stir in milk and olive oil until combined.
  5. Pour wet ingredients into dry mixture and mix gently until just combined; avoid overmixing.
  6. Spoon batter into muffin tins, filling each cup about two-thirds full. Bake for 20-25 minutes until golden brown.
