  • 8 oz rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1 cup bell peppers, chopped (mixed colors)
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup honey
  • 2 tbsp Dijon mustard
  • 2 tbsp olive oil (optional)

Instructions

  1. Cook pasta in salted boiling water for 8-10 minutes until al dente. Drain and rinse under cold water.
  2. While pasta cooks, chop cherry tomatoes, cucumber, bell peppers, red onion, and parsley.
  3. In a small bowl, whisk together honey and Dijon mustard. Add olive oil if desired.
  4. In a large bowl, combine cooked pasta and chopped veggies; pour dressing over and toss until evenly coated.
  5. Chill in the fridge for at least 30 minutes before serving to allow flavors to meld.
