3 cups watermelon, chopped
1 medium cucumber, peeled and sliced
1 cup plain Greek yogurt
2 tablespoons honey or agave syrup (adjust to taste)
Juice of 1 lime
Mint leaves (optional)
Instructions
Prepare the ingredients by chopping the watermelon into chunks and peeling the cucumber.
In a blender, combine watermelon, cucumber, Greek yogurt, honey/agave syrup, and lime juice. Blend until smooth.
Taste the smoothie and adjust sweetness or lime juice as desired.
If using, add mint leaves and blend briefly until incorporated.
For an extra cold smoothie, refrigerate for 10-15 minutes before serving.
Pour into chilled glasses and garnish with mint or watermelon wedges if desired.
