Raspberry Crumble Cookies are a delightful blend of buttery goodness and sweet-tart raspberries. Perfect for any occasion, they’re sure to bring warmth and joy to your gatherings.

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup unsalted butter, softened
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 cup fresh raspberries
  • 1/2 cup oats (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, and salt.
  3. In another bowl, cream the softened butter until fluffy. Gradually add sugars and mix well.
  4. Beat in eggs one at a time, followed by vanilla extract.
  5. Gradually incorporate dry ingredients into the wet mixture until just combined. Gently fold in raspberries.
  6. For the crumble topping, mix flour, oats (if using), brown sugar, and melted butter until crumbly.
  7. Drop spoonfuls of dough onto prepared sheets and sprinkle crumble topping over each cookie.
  8. Bake for 12-15 minutes until edges are golden but centers remain soft. Cool on racks.

Notes

  • Feel free to substitute raspberries with blueberries or strawberries for a different flavor.
  • Add lemon zest for extra brightness.
