  • 1 cup bell peppers (mixed colors), sliced
  • 1 cup broccoli florets
  • 1 cup carrots, thinly sliced
  • 3 garlic cloves, minced
  • 2 tsp fresh ginger, grated
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 2 green onions, sliced for garnish

Instructions

  1. Press the tofu for at least 15 minutes to remove excess moisture.
  2. Chop the vegetables into uniform pieces for even cooking.
  3. Heat sesame oil in a large skillet over medium-high heat. Add minced garlic and grated ginger; sauté for about 30 seconds until fragrant.
  4. Add cubed tofu to the skillet; cook until golden brown on all sides (about 5-7 minutes).
  5. Toss in bell peppers, broccoli, and carrots; stir-fry for 4-5 minutes until veggies are colorful yet crisp.
  6. Drizzle soy sauce over the mixture, stirring well to coat. Cook for an additional minute before removing from heat.
  7. Garnish with sliced green onions and serve hot.
