1 lb boneless skinless chicken breasts, diced
3–4 cloves fresh garlic, minced
1-inch piece ginger, grated
4 green onions, chopped
¼ cup low-sodium soy sauce
2 tbsp rice vinegar
½ cup cornstarch
2 tbsp brown sugar
1 tsp sesame oil

Instructions
Gather all ingredients and chop the garlic, ginger, and green onions.
In a bowl, combine diced chicken with soy sauce, cornstarch, and sesame oil. Marinate for at least 15 minutes.
Heat cooking oil in a large skillet over medium-high heat. Add marinated chicken in batches and cook until golden brown (6-8 minutes). Remove from skillet.
In the same skillet, add minced garlic and ginger; sauté until fragrant (about 30 seconds). Stir in rice vinegar, sugar, soy sauce, and a splash of water; simmer.
Return the cooked chicken to the skillet; stir until coated in the sauce and heated through (2-3 minutes).
Serve hot over steamed rice or noodles, topped with chopped green onions.
