  • 1 lb boneless skinless chicken breasts, diced
  • 34 cloves fresh garlic, minced
  • 1-inch piece ginger, grated
  • 4 green onions, chopped
  • ¼ cup low-sodium soy sauce
  • 2 tbsp rice vinegar
  • ½ cup cornstarch
  • 2 tbsp brown sugar
  • 1 tsp sesame oil
  • Cooking oil (for frying)

Instructions

  1. Gather all ingredients and chop the garlic, ginger, and green onions.
  2. In a bowl, combine diced chicken with soy sauce, cornstarch, and sesame oil. Marinate for at least 15 minutes.
  3. Heat cooking oil in a large skillet over medium-high heat. Add marinated chicken in batches and cook until golden brown (6-8 minutes). Remove from skillet.
  4. In the same skillet, add minced garlic and ginger; sauté until fragrant (about 30 seconds). Stir in rice vinegar, sugar, soy sauce, and a splash of water; simmer.
  5. Return the cooked chicken to the skillet; stir until coated in the sauce and heated through (2-3 minutes).
  6. Serve hot over steamed rice or noodles, topped with chopped green onions.

  • For a vegetarian option, substitute chicken with firm tofu or mixed vegetables.
