  • 1 lb large peeled and deveined shrimp
  • 2 bell peppers (red and green), sliced
  • 2 cups broccoli florets
  • 2 fresh carrots, julienned
  • 3 cloves garlic, minced
  • 1 inch fresh ginger, minced
  • ¼ cup low-sodium soy sauce
  • 1 tbsp sesame oil
  • 2 green onions, chopped
  • Cooked rice or noodles (to serve)

Instructions

  1. Wash and prepare all vegetables: slice bell peppers, chop broccoli, and julienne carrots.
  2. Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat until shimmering.
  3. Add minced garlic and ginger; sauté for 30 seconds until fragrant.
  4. Cook the shrimp in a single layer for 3-4 minutes until pink and opaque, flipping halfway through.
  5. Add the vegetables to the pan; stir-fry for about 5 minutes until tender-crisp.
  6. Pour in soy sauce and sesame oil, tossing everything well before serving over rice or noodles.
