  • 8 oz fresh mushrooms (cremini or button), sliced
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup low-sodium vegetable broth
  • 1 cup full-fat sour cream (or Greek yogurt)
  • 8 oz egg noodles (or preferred pasta)
  • 2 tsp olive oil
  • 1 tsp Dijon mustard
  • Fresh parsley, for garnish

Instructions

  1. In a large skillet, heat olive oil over medium heat. Sauté chopped onions and minced garlic until fragrant and translucent, about 3-4 minutes.
  2. Add sliced mushrooms and cook until they release their juices, stirring occasionally for about 5-7 minutes.
  3. Pour in the vegetable broth and stir in Dijon mustard; let it simmer gently for about 5 minutes.
  4. Remove from heat and stir in sour cream until smooth and creamy.
  5. Toss cooked pasta into the sauce, mixing gently until all noodles are coated.
  6. Garnish with freshly chopped parsley before serving hot.
