Ingredients
Scale
1 cup long-grain rice
8 ounces fresh mushrooms (cremini and shiitake)
1 medium onion, finely chopped
3 cloves garlic, minced
2 cups low-sodium vegetable broth
2 tablespoons butter or olive oil
Fresh herbs (parsley or thyme), for garnish
Salt and pepper, to taste
Instructions
Rinse the rice under cold water until the water runs clear to remove excess starch.
In a large skillet over medium heat, melt the butter. Sauté the onion until translucent (about 5 minutes).
Add the sliced mushrooms and cook until golden brown (approximately 7 minutes).
Stir in the minced garlic until fragrant (about 30 seconds).
Add the rinsed rice and vegetable broth; bring to a boil while stirring gently.
Reduce heat to low, cover, and let simmer for 15-20 minutes until liquid is absorbed.
Remove from heat and let sit covered for an additional 5 minutes before fluffing with a fork.
Notes
Substitute different rice varieties like arborio for creamy texture or jasmine for fragrance.
Enhance with seasonal veggies such as peas or spinach for added nutrition.
Serve with grilled chicken or roasted vegetables for a complete meal.
