  • 1 cup long-grain rice
  • 8 ounces fresh mushrooms (cremini and shiitake)
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups low-sodium vegetable broth
  • 2 tablespoons butter or olive oil
  • Fresh herbs (parsley or thyme), for garnish
  • Salt and pepper, to taste

Instructions

  1. Rinse the rice under cold water until the water runs clear to remove excess starch.
  2. In a large skillet over medium heat, melt the butter. Sauté the onion until translucent (about 5 minutes).
  3. Add the sliced mushrooms and cook until golden brown (approximately 7 minutes).
  4. Stir in the minced garlic until fragrant (about 30 seconds).
  5. Add the rinsed rice and vegetable broth; bring to a boil while stirring gently.
  6. Reduce heat to low, cover, and let simmer for 15-20 minutes until liquid is absorbed.
  7. Remove from heat and let sit covered for an additional 5 minutes before fluffing with a fork.
