  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1/4 cup granulated sugar
  • 1/4 tsp salt
  • 1/4 cup unsalted butter, cold and cubed
  • 1/2 cup milk
  • 1 cup fresh strawberries, halved
  • 1 cup blueberries
  • 1 cup raspberries
  • 1 cup heavy whipping cream
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 400°F (200°C). In a mixing bowl, whisk together flour, baking powder, sugar, and salt.
  2. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in milk until just combined.
  3. Pour batter into a greased round cake pan. Bake for 20-25 minutes or until golden brown and a toothpick comes out clean.
  4. While the cake cools, beat heavy cream with vanilla extract until soft peaks form.
  5. Once cooled, slice the cake horizontally in half. Layer with berries and whipped cream before placing the top layer back on.
