Ingredients

  • Chocolate cookie crust
  • Cream cheese
  • Granulated sugar
  • Eggs
  • Mint extract
  • Unsweetened cocoa powder
  • Heavy whipping cream
  • Green food coloring (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, mix crushed cookies with melted butter; press firmly into the bottom of a springform pan.
  2. Bake the crust for 10 minutes and let it cool completely.
  3. Beat room-temperature cream cheese until smooth. Gradually add sugar, mixing until fully combined.
  4. Add eggs one at a time, beating well after each addition. Stir in mint extract and cocoa powder until smooth.
  5. Optionally, mix in green food coloring to achieve your desired shade.
  6. Pour the filling over the cooled crust and bake at 325°F (160°C) for about 60 minutes or until the center is slightly jiggly.
  7. Turn off the oven, leave the door ajar for an hour, then chill in the refrigerator overnight.
