4 cloves fresh garlic
1 cup heavy cream
1 cup chicken broth
1/2 cup sun-dried tomatoes
1/2 cup freshly grated Parmesan cheese
2 tbsp olive oil
1 tsp dried Italian herbs (basil, oregano, thyme)
Salt and pepper to taste
1 tbsp Dijon mustard
Juice of 1 lemon
Instructions
Preheat oven to 400°F (200°C). In a large oven-safe skillet, heat olive oil over medium heat.
Season chicken with salt and pepper. Sear chicken for 4-5 minutes on each side until golden brown.
Add minced garlic and sauté until fragrant. Pour in heavy cream and chicken broth, stirring in Dijon mustard and lemon juice.
Mix in dried herbs and sun-dried tomatoes, allowing the sauce to simmer for about 5 minutes.
Top with grated Parmesan cheese and transfer the skillet to the oven. Bake for 20-25 minutes or until chicken reaches an internal temperature of 165°F (75°C).
