1 package pie crusts (store-bought or homemade)
1 cup pecans (chopped or whole)
3/4 cup brown sugar
1/4 cup maple syrup
2 large eggs
1 tsp vanilla extract
1/4 tsp salt
Instructions
Preheat your oven to 350°F (175°C).
Roll out the pie crust on a floured surface to about 1/8 inch thick and cut into circles that fit your muffin tin cups.
Press each dough circle into the muffin tin and fill with chopped pecans until halfway full.
In a mixing bowl, whisk together brown sugar, maple syrup, eggs, vanilla extract, and salt until smooth.
Pour the filling mixture over the pecans in each cup until just full, leaving a tiny bit of space at the top.
Bake for 20-25 minutes, or until golden brown and slightly puffed up.
Allow to cool slightly before removing from the muffin tin.
