1.5 cups basmati rice
2 medium onions, finely sliced
2 tbsp garlic and ginger paste
2 medium ripe tomatoes, chopped
2 tbsp biryani masala powder
1/4 cup fresh cilantro, chopped
1/4 cup fresh mint leaves, chopped
1/2 cup plain yogurt
3 tbsp cooking oil or ghee
Salt and pepper to taste
Instructions
Marinate chicken with yogurt, garlic-ginger paste, salt, pepper, and biryani masala. Set aside for at least 30 minutes.
Heat oil or ghee in a large pot over medium heat. Sauté sliced onions until golden brown, about 10 minutes.
Add chopped tomatoes and stir in additional biryani masala powder; cook until tomatoes soften.
Incorporate marinated chicken into the pot, cooking until browned on all sides (about 8-10 minutes).
Rinse basmati rice under cold water until the water runs clear. Add rinsed rice and water (1 cup rice to 1.5 cups water) to the pot and season well.
Bring to a boil, then reduce heat to low. Cover tightly and simmer for 20 minutes without lifting the lid.
Let sit off heat for another 10 minutes before fluffing gently with a fork. Serve hot with raita or salad for an extra burst of flavor!
