  • 8 cups day-old brioche or challah bread, cubed
  • 4 ripe bananas, mashed
  • 4 large eggs
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 cup dark brown sugar

  • 2 tsp pure vanilla extract
  • 4 tbsp unsalted butter (for greasing)
  • 1 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish with butter.
  2. Cut the bread into one-inch cubes and place them in a large bowl.
  3. In another bowl, mash the ripe bananas until slightly chunky.
