  • 4 boneless chicken breasts (approximately 1.5 lbs)
  • 1/2 cup pure honey
  • 1/4 cup Dijon mustard
  • 3 garlic cloves, minced
  • 2 tbsp olive oil
  • 2 tbsp low-sodium soy sauce
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a baking dish.
  2. In a bowl, whisk together honey, Dijon mustard, minced garlic, olive oil, soy sauce, salt, and pepper until smooth.
  3. Place chicken breasts in a resealable bag or bowl and pour half of the marinade over them. Let marinate for at least 30 minutes.
  4. Remove chicken from marinade (discard leftover marinade) and place in the prepared baking dish.
  5. Bake for 25-30 minutes or until the internal temperature reaches 165°F (75°C).
  6. Drizzle with remaining marinade before serving and garnish with fresh parsley.
