  • 28 oz can crushed tomatoes
  • 4 cups low-sodium vegetable broth
  • 8 oz lasagna noodles, broken into pieces
  • 1 cup shredded mozzarella cheese
  • 2 tsp Italian seasoning
  • Fresh basil leaves for garnish

Instructions

  1. In a large pot over medium heat, drizzle olive oil and sauté the chopped onions and minced garlic until fragrant and translucent.
  2. Add the ground beef or turkey, cooking until browned while breaking it apart (about 5-7 minutes).
  3. Stir in the crushed tomatoes and vegetable broth, bringing to a gentle simmer for about 10 minutes.
  4. Add the broken lasagna noodles and Italian seasoning, stirring well to coat. Cook until noodles are tender (approximately 10-15 minutes).
  5. Mix in the shredded mozzarella cheese until melted and gooey.
  6. Serve hot, garnished with fresh basil.

Notes

For a vegetarian version, omit the meat and add extra vegetables such as mushrooms or bell peppers.
