  • 2 lbs chuck roast, cut into cubes
  • 1 cup Guinness stout
  • 2 medium carrots, diced
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 sheets puff pastry
  • 1 cup low-sodium beef broth
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. 1. Sear the Beef: Heat oil in a large Dutch oven over medium-high heat. Brown the beef cubes in batches until caramelized; then set aside.
  2. 2. Add Aromatics: In the same pot, sauté onions and garlic until translucent.
  3. 3. Combine Ingredients: Stir in carrots and return beef to the pot. Pour in Guinness and broth, scraping up any browned bits.
  4. 4. Add Herbs & Simmer: Add thyme and bay leaves. Cover and simmer on low for about 2 hours until beef is tender.
  5. 5. Prepare Puff Pastry: Preheat oven to 400°F (200°C). Roll out puff pastry to fit your baking dish.
