1 cup Guinness stout
2 medium carrots, diced
1 large onion, chopped
4 cloves garlic, minced
2 sheets puff pastry
1 cup low-sodium beef broth
2 sprigs fresh thyme
2 bay leaves

Instructions
1. Sear the Beef: Heat oil in a large Dutch oven over medium-high heat. Brown the beef cubes in batches until caramelized; then set aside.
2. Add Aromatics: In the same pot, sauté onions and garlic until translucent.
3. Combine Ingredients: Stir in carrots and return beef to the pot. Pour in Guinness and broth, scraping up any browned bits.
