  • 1 lb large shrimp, deveined
  • 2 ripe avocados, sliced
  • 2 tbsp freshly squeezed lime juice
  • 3 cloves garlic, minced
  • 1/4 cup fresh cilantro, chopped (or parsley)
  • 1 tsp chili powder
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 cup bell peppers, diced
  • 1 cup onions, diced

Instructions

  1. Wash vegetables and herbs. Dice bell peppers and onions; chop cilantro and mince garlic.
  2. In a bowl, combine shrimp with olive oil, lime juice, minced garlic, chili powder, salt, and pepper. Let marinate for 15-30 minutes.
  3. Preheat your grill to medium-high heat. Cook marinated shrimp for 2-3 minutes per side until pink and opaque.
  4. In a skillet over medium heat, sauté bell peppers and onions for about 5-7 minutes until tender but still crunchy.
