  • 4 boneless, skinless chicken breasts
  • 1/2 cup fresh lemon juice (about 2 large lemons)
  • 1/4 cup extra virgin olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • Salt & pepper to taste
  • Zest of 1 lemon

Instructions

  1. In a bowl, whisk together lemon juice, olive oil, minced garlic, chopped herbs, salt, and pepper.
  2. Place chicken in a zip-top bag or bowl and pour the marinade over it. Ensure all pieces are coated.
  3. Seal the bag or cover the bowl; refrigerate for at least 30 minutes up to 2 hours.
  4. Preheat grill to medium-high heat (375°F).
  5. Grill chicken for about 6-7 minutes per side until it reaches an internal temperature of 165°F (75°C).
  6. Just before serving, drizzle with fresh lemon juice for an extra burst of flavor.
