  • 1 lb lean ground beef
  • 1/4 cup fresh parsley, chopped
  • 2 tsp dried oregano
  • 1 small onion, finely chopped
  • 3 garlic cloves, minced
  • 1/2 cup plain breadcrumbs
  • 2 large eggs
  • Salt and pepper to taste
  • Tzatziki sauce for serving

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine ground beef, parsley, oregano, onion, garlic, breadcrumbs, eggs, salt, and pepper. Mix until well combined.
  3. Roll the mixture into balls about 1 inch in diameter and place on a parchment-lined baking sheet.
  4. Bake for 20-25 minutes or until golden brown and internal temperature reaches 160°F (70°C).
  5. While baking, prepare tzatziki by mixing yogurt with cucumber, garlic, and lemon juice.
  6. Serve meatballs hot with tzatziki sauce.

Notes

  • You can substitute breadcrumbs with crushed oats for a different texture.
  •  Add feta cheese for an extra tangy flavor.
  • For a gluten-free option, replace breadcrumbs with almond flour.
