1 lb lean ground beef
1/4 cup fresh parsley, chopped
2 tsp dried oregano
1 small onion, finely chopped
3 garlic cloves, minced
1/2 cup plain breadcrumbs
2 large eggs
Salt and pepper to taste
Tzatziki sauce for serving
Instructions
Preheat oven to 400°F (200°C).
In a large bowl, combine ground beef, parsley, oregano, onion, garlic, breadcrumbs, eggs, salt, and pepper. Mix until well combined.
Roll the mixture into balls about 1 inch in diameter and place on a parchment-lined baking sheet.
Bake for 20-25 minutes or until golden brown and internal temperature reaches 160°F (70°C).
While baking, prepare tzatziki by mixing yogurt with cucumber, garlic, and lemon juice.
Serve meatballs hot with tzatziki sauce.
Notes
You can substitute breadcrumbs with crushed oats for a different texture.
