  • 2 lbs beef chuck roast, cubed
  • 2 tbsp extra virgin olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 3 large carrots, sliced thick
  • 28 oz can whole peeled tomatoes, crushed
  • 4 cups low-sodium chicken broth
  • 1 cup orzo pasta
  • 2 tsp dried oregano
  • Zest of 1 lemon
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium-high heat. Sear cubed beef until browned on all sides (about 5 minutes).
  2. Add chopped onion and minced garlic; sauté until onions are soft (approximately 3 minutes).
  3. Stir in sliced carrots and crushed tomatoes until well combined.
  4. Pour in chicken broth; add oregano, salt, and pepper. Bring to a gentle simmer.
  5. Carefully add orzo pasta into the pot. Stir occasionally until the pasta is tender (about 10 minutes).
  6. Finish with fresh lemon zest before serving for added brightness.
