4 large eggs
1 cup buttermilk
½ cup vegetable oil
2 tsp vanilla extract
1 cup sweetened coconut flakes
1 cup chopped pecans
1 can (14 oz) sweetened condensed milk
½ cup unsalted butter (room temperature)
Instructions
Preheat oven to 350°F (175°C). Grease and flour three 9-inch round baking pans.
In a mixing bowl, combine flour, cocoa powder, sugar, baking soda, and salt.
In another bowl, whisk together eggs, buttermilk, vegetable oil, and vanilla until smooth.
Gradually mix the dry ingredients into the wet mixture until just combined; avoid overmixing.
Divide the batter evenly among prepared pans and bake for 30-35 minutes or until a toothpick inserted comes out clean.
For the frosting, melt butter and sweetened condensed milk in a saucepan over medium heat. Stir in coconut flakes and chopped pecans.
Once cakes are cool, frost between layers and on top.
