  • 2 cups rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup bell peppers, diced (mixed colors)
  • ½ cup red onion, thinly sliced
  • ½ cup crumbled feta cheese
  • ¼ cup olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta in salted boiling water until al dente. Drain and rinse under cold water.
  2. While the pasta cooks, chop the cherry tomatoes, cucumber, bell peppers, and red onion into bite-sized pieces.
  3. In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper to create the dressing.
  4. In a large bowl, combine the cooled pasta with chopped vegetables and feta cheese.
  5. Pour the dressing over the salad and toss gently until evenly coated.
  6. Chill in the refrigerator for at least 30 minutes before serving.
