Bright and flavorful, this Fresh Herb Potato Salad is a delightful blend of tender potatoes and zesty herbs, perfect for any picnic or gathering.

Ingredients

  • 1.5 lbs baby potatoes
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup fresh dill, chopped
  • 1/4 cup chives, finely chopped
  • 1/3 cup extra virgin olive oil
  • 3 tbsp freshly squeezed lemon juice
  • Salt and pepper to taste

Instructions

  1. Boil baby potatoes in salted water for 15-20 minutes until fork-tender. Drain and let cool slightly.
  2. Halve or quarter the warm potatoes and place them in a large bowl.
  3. In a separate bowl, whisk together olive oil, lemon juice, salt, and pepper.
  4. Add the chopped herbs to the potatoes and drizzle dressing over the top. Toss gently to coat.
  5. Serve immediately or chill in the fridge for an hour before serving.

Notes

  • For added flavor, consider mixing in roasted garlic or finely chopped scallions.
