Eggplant Parmesan is a hearty vegetarian dish featuring layers of crispy eggplant, savory marinara sauce, and melted cheese, perfect for family dinners or gatherings.

Ingredients

Scale
  • 2 medium eggplants (about 1.5 lbs)
  • 2 cups marinara sauce
  • 8 oz fresh mozzarella cheese, sliced
  • 1 cup grated Parmesan cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup seasoned breadcrumbs
  • 1/4 cup extra virgin olive oil
  • Fresh basil leaves for garnish
  • Salt and pepper to taste

Instructions

  1. Slice the eggplants into 1/4-inch rounds and sprinkle with salt. Let sit for 30 minutes to draw out moisture.
  2. Rinse excess salt and pat dry. Dredge each slice in flour, dip in beaten eggs, then coat with breadcrumbs.
  3. Heat olive oil in a skillet over medium heat and fry eggplant slices until golden brown on both sides.
  4. In a baking dish, spread some marinara sauce on the bottom. Layer fried eggplants, followed by mozzarella and Parmesan cheese. Repeat layering until all ingredients are used, finishing with marinara and cheese on top.
  5. Preheat the oven to 375°F (190°C). Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes until bubbling.
  6. Let cool slightly before garnishing with fresh basil leaves. Serve warm.

Notes

  • For added flavor, consider mixing herbs like oregano or thyme into the breadcrumbs.
  •  You can swap mozzarella for provolone or add sautéed spinach between layers for extra nutrition.
