  • 1 lb large shrimp, peeled and deveined
  • 2 bell peppers (1 red, 1 yellow), sliced into strips
  • 1 large red onion, sliced
  • 2 tbsp taco seasoning
  • 2 tbsp olive oil
  • 8 small flour or corn tortillas
  • Juice of 1 lime
  • Fresh cilantro (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Slice the bell peppers and red onion into strips.
  3. In a bowl, toss the shrimp with olive oil and taco seasoning until evenly coated.
  4. Spread the seasoned shrimp and sliced vegetables on a sheet pan, ensuring they are not overcrowded.
  5. Roast in the oven for 15-20 minutes until the shrimp are pink and veggies are slightly charred.
