  • 1 lb large shrimp, deveined
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 large red onion, sliced
  • 2 tbsp extra virgin olive oil
  • 2 tsp chili powder
  • 1 tsp cumin
  • Juice of 1 lime
  • Salt and pepper to taste
  • 8 tortillas (flour or corn)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Chop the bell peppers and onion into strips.
  3. In a bowl, toss shrimp with olive oil, chili powder, cumin, lime juice, salt, and pepper until well-coated.
  4. Spread the seasoned shrimp and veggies evenly on a parchment-lined baking sheet.
  5. Bake for 15-20 minutes until shrimp are pink and opaque, and veggies are tender.
  6. Toss everything gently on the sheet pan and serve hot with warm tortillas.
