  • 1 loaf brioche bread (about 12 cups cubed)
  • 6 large eggs
  • 2 cups whole milk (or almond/oat milk)
  • 2 tsp ground cinnamon
  • 2 tsp pure vanilla extract
  • 1/2 cup real maple syrup
  • 1/4 cup powdered sugar (for dusting)
  • 1 cup fresh berries (strawberries or blueberries)

Instructions

  1. Cut the brioche into one-inch cubes and layer them in a greased baking dish.
  2. In a mixing bowl, whisk together eggs, milk, cinnamon, vanilla extract, and maple syrup until smooth.
  3. Pour the egg mixture evenly over the bread cubes, gently pressing to ensure all pieces are soaked.
  4. Cover tightly with plastic wrap and refrigerate overnight.
  5. Preheat oven to 350°F (175°C). Bake uncovered for 45–50 minutes until golden brown on top.
