Ingredients
Scale
10 cups challah bread, cubed
6 large eggs
2 cups whole milk (or almond/oat milk)
2 tsp cinnamon
2 tsp pure vanilla extract
1/2 cup maple syrup
1 cup fresh berries (strawberries or blueberries)
1/2 cup chopped pecans or walnuts (optional)
Instructions
Grease a 9×13-inch baking dish with butter or nonstick spray.
Cut challah bread into 1-inch cubes and place them in the baking dish.
In a large mixing bowl, whisk together eggs, milk, cinnamon, vanilla extract, and maple syrup until smooth.
Pour the custard mixture over the bread cubes and gently fold to coat.
If using, fold in berries and nuts before covering the dish with plastic wrap.
Refrigerate overnight (minimum of 8 hours).
Preheat oven to 350°F (175°C). Remove plastic wrap and optionally sprinkle with extra cinnamon or nuts.
Bake uncovered for 45-50 minutes until golden brown and puffy.
Serve warm drizzled with maple syrup.
Notes
Use stale bread for better absorption of the custard mixture; fresh bread may become too mushy.
Customize by swapping in croissants or brioche for added richness, or include fruits like bananas for extra flavor.
